This summer pasta salad is made with no oil and is gluten free. Loaded with fresh veggies and a super simple no oil dressing.

Ingredients

  • Salad Ingredients
  • 1 12 ounce package of gluten free pasta cooked to package directions

  • 1/2 cup black olives – halved

  • 1 cup red/orange/yellow bell peppers – chopped

  • 1/2 cup red onion

  • 1/2 cup artichoke hearts

  • 1/2 cup cherry tomatoes – cut in halved

  • 1/2 cup cucumber – chopped

  • Cilantro or any fresh herb to garnish at the end

  • 3-2-1 Dressing Ingredients (Double Batch)
  • 6 tbsp balsamic vinegar

  • 4 tbsp mustard

  • 2 tbsp maple syrup

  • Pinch of salt to taste

Directions

  • 3-2-1 Dressing Directions
  • Add all ingredients into a jar, shake
  • Salad Directions
  • Dump all ingredients into a large bowl and toss add salt and pepper to taste
  • Add 3-2-1 dressing, salt and pepper, toss and serve
