minutesThis summer pasta salad is made with no oil and is gluten free. Loaded with fresh veggies and a super simple no oil dressing.
Ingredients
- Salad Ingredients
1 12 ounce package of gluten free pasta cooked to package directions
1/2 cup black olives – halved
1 cup red/orange/yellow bell peppers – chopped
1/2 cup red onion
1/2 cup artichoke hearts
1/2 cup cherry tomatoes – cut in halved
1/2 cup cucumber – chopped
Cilantro or any fresh herb to garnish at the end
- 3-2-1 Dressing Ingredients (Double Batch)
6 tbsp balsamic vinegar
4 tbsp mustard
2 tbsp maple syrup
Pinch of salt to taste
Directions
- 3-2-1 Dressing Directions
- Add all ingredients into a jar, shake
- Salad Directions
- Dump all ingredients into a large bowl and toss add salt and pepper to taste
- Add 3-2-1 dressing, salt and pepper, toss and serve
